Chia Pudding

When the desire for something sweet and satisfying strikes, chia pudding stands out as a delightful option. This isn’t just any dessert; it’s one where chia seeds swell up, creating a pudding-like consistency that’s both tasty and fulfilling. My usual go-tos for sweetening include honey or maple syrup, but I’ve recently found myself drawn to yacon syrup. Harvested from a tuber that’s indigenous to the Andes, yacon acts as a prebiotic, offering a feast for the beneficial bacteria residing in your gut.

Gathering Your Chia Pudding Ingredients:

  • Chia Seeds: Start with 2/3 cup of these mighty seeds. They’re the key players in giving this pudding its signature texture.
  • Coconut Milk: 2 cups, preferably homemade (find a great recipe here), make the pudding rich and creamy.
  • Cinnamon: Add 2 tsp to introduce a warm, spicy note.
  • Vanilla Extract: Incorporate 1/2 tsp or the contents of a scraped vanilla bean for that classic, aromatic flavor.
  • Yacon Syrup: 1 tsp of this sweetener not only adds depth but also health benefits.

Choose Your Toppings:

  • Coconut flakes can add a delightful crunch and tropical flair.
  • Chopped almonds bring in a nutty texture and are a great source of healthy fats.
  • Berries, with their tart and sweet notes, introduce a burst of freshness and color.
  • Cacao nibs sprinkle in a touch of bitterness, contrasting beautifully with the pudding’s sweetness.

Making Your Chia Pudding:

Begin by gently warming the coconut milk, cinnamon, and yacon syrup together. This process allows the yacon syrup to dissolve completely and the cinnamon to infuse the milk with its fragrance, without letting the mixture boil. Once cooled, vigorously whisk in the chia seeds and vanilla extract, ensuring the seeds are evenly distributed and don’t clump together.

After a stint in the refrigerator for 4-6 hours, the chia pudding will be ready to enjoy. This is when you can get creative with your choice of toppings, customizing each bowl to suit your taste.
