Chia Pudding

This is great when you’ve got a real hankering for something desserty. The proteins in the chia expand to make a pudding consistancy, and it’s pretty delish. Usually I will add honey or maple syrup, but during the cleanse, I’m trying the yacon syrup. Yacon is a tuber grown and eaten in the Andes, and it is prebiotic. This means it acts as food for the beneficial gut bacteria already present in your system.

Ingredients

  • 2/3 C Chia Seeds
  • 2 C Coconut Milk (homemade is best…see the recipe here)
  • 2 tsp cinnamon
  • 1/2 tsp real Vanilla Extract, or one Vanilla Bean, scored and scraped
  • 1 tsp Yacon Syrup

optional toppings

  • coconut flakes
  • chopped almonds
  • berries
  • cacao nibs

 

Directions

Warm coconut milk, cinnamon and yacon together just until yacon is melted and cinnamon becomes fragrant. Don’t let it simmer or boil. Let cool. Add and whisk together quickly chia and vanilla.  It’s really easy for the chia to expand and clump together, so give it a really good whip.

Refrigerate for 4-6 hours, and serve topped with your favs.

There are a million variations on this, go crazy.
